Location: Valpolicella Valpantena, Controlled and Guaranteed Designation of Origin

Vineyard: Selection of the best grapes from our hillside and foothill vineyards

Grapes: Corvina, Corvinone, Rondinella

Vineyards: owned from Valpantena: hamlets of Poiano, Quinto, Sezano

Characteristics of the vineyards: Located in a hilly and foothill position with southern exposure, clayey, highly calcareous soil. The plants are in Gujot with a density of 3300 to 6200 vines per hectare

Winemaking and Aging

Harvest: Carried out by hand in small 5 kg boxes in the first and second ten days of October. For the production of this wine only the wings of the bunch are used, also called “ears” from which the word Recioto comes

Vinification: It is carried out after drying for 120 days in our fruit cellars with a weight loss of 55%. The pressed grapes fall by gravity into small 50 hl stainless steel vats. Daily pumpovers and delestages are carried out throughout the entire fermentation period. Temperature controlled at 18-20°C

Tasting Notes

Maturation: Aging for 30 months in 10 hl barrels and selected extra-fine grain oak barriques and 6 months in the bottle

Organoleptic characteristics: Dark ruby ​​red colour, it has gentle notes of berries, hints of spices (cinnamon, black pepper…), very full-bodied, warm, soft and enveloping, very strong and elegant with very subtle gentle tannins. Wine of rare elegance and very long persistence

Pairings: Suitable for robust meat dishes or mature cheeses, but the best way to appreciate it on its own is by focusing on this wonderful wine
